Red Kidney Bean Cutlet


  • 2 tablespoons canola oil
  • 1 small red well pepper, seeded and chopped small
  • Half cup celery, chopped
  • 1 large garlic clove, minced
  • Half tablespoon chilli powder
  • Half tablespoon dried thyme
  • Sea salt and fresh ground black pepper
  • Half cup cooked red beans
  • Half cup cooked brown rice
  • Half cup breadcrumbs
  • 2 tablespoon parsley


  1. Heat oil and all ingredients, except salt and pepper. Cover and cook, stirring occasionally until soft (about ten minutes).
  2. In a food processor, combine everything and add salt and pepper, and process it all together.
  3. pulse, without grinding it entirely and leaving some texture.
  4. Shape into patties and set aside; you can add breadcrumbs to bind them.
  5. Pan-fry patties on both sides till brown
